Summer Vegetable Salad Ingredients
1 1/2 cups cooked and cooled whole wheat Gemelli pasta (add a little salt, pepper and butter to the pasta before cooling)
1/2 cup chopped green onion
1 cup chopped zucchini squash
1 cup chopped yellow squash
1/2 cup shelled green blackeye peas
1 cup chopped cucumber
1/2 cup chopped cherry tomatoes
2 hard boiled eggs (grated)
1/3 cup raw sunflower seeds
Cook the pasta according to the package directions. Drain pasta, pour back into pan and add a teaspoon of butter and dash of salt and pepper. Toss and cool.
Combine all ingredients in large bowl and add salad dressing of your choice.
