Apple Stuffed Buttercup Squash

Apple Stuffed Buttercup Squash

Recipe shared by Karen Smith and based on a Betty Crocker recipe.

Ingredients:

1 1-2 pound Buttercup Squash

For the stuffing:
1-2 Tart Cooking Apples (I used Granny Smith) diced
1/4 cup brown sugar
1/4 cup butter melted
1/4 cup chopped nuts
1 tsp cinnamon
1/4 tsp Nutmeg

Method:

Mix all stuffing ingredients in a bowl making sure the apples are coated with the sugar, butter and spices.

Cut the squash in half, remove stem and end button so the halves will sit level in the baking pan, scoop out all the seeds and fibers.

Place the squash cut side up in a baking pan and fill each half with stuffing. (If you have extra stuffing put it in a covered baking dish and bake in the oven along with the squash.)

Cover and Bake at 400 for 40 – 60 minutes depending on the size of the squash. The squash should be tender and easy to scoop out and serve
