I admit that I am using a lot of water to keep these plants happy enough to be bearing good quality produce, but the results are definitely worth it. I harvested over two pounds of bell peppers – small, but meaty and juicy, and almost two pounds of jalapeno peppers – all very nice looking. The large tomatoes are just starting to ripen, and they are fairly good quality, and the cherry tomatoes are producing lots of really tasty fruits.

Pepper and Tomato Harvest

I think I have enough jalapenos to pickle a few pints this weekend. I found what looks like a good recipe for pickled jalapenos, Escabeche, on www.elise.com. I’ll provide an update after I have had a chance to try it and let you know how it tastes.

Jalapenos and Pickled Jalapenos Recipe

Update: I used the referenced recipe to can up four pints of pickled jalapenos yesterday. I had a couple of extra jalapenos that I couldn’t fit into the jars, so I chopped them up and put them on a pizza and they were hot but delicious. Once they have aged for a few weeks they should be just perfect.

Pickled Jalapenos

Hope you have a great weekend.
Carol

Although it has been extremely hot so far this summer, I am starting to bring in a pretty good harvest of jalapeno and bell peppers, and tomatoes.
