{"id":754,"date":"2011-10-18T09:12:45","date_gmt":"2011-10-18T14:12:45","guid":{"rendered":"http:\/\/lostvalleygardens.com\/LVGblog\/?page_id=754"},"modified":"2011-10-18T09:12:45","modified_gmt":"2011-10-18T14:12:45","slug":"swiss-chard-and-mushroom-lasagna","status":"publish","type":"page","link":"https:\/\/lostvalleygardens.com\/LVGblog\/swiss-chard-and-mushroom-lasagna\/","title":{"rendered":"Swiss Chard and Mushroom Lasagna"},"content":{"rendered":"<h1>Swiss Chard and Mushroom Lasagna<\/h1>\n<p>This recipe was adapted from <a href=\"http:\/\/planetgreen.discovery.com\/food-health\/emeril-spinach-mushroom-lasagne.html\" title=\"Emeril's Spinach and Mushroom Lasagna Recipe\" target=\"_blank\">Emeril&#8217;s Spinach and Mushroom Lasagna<\/a>.<\/p>\n<h2>Ingredients:<\/h2>\n<p><strong>Chard and Mushroom Filling:<\/strong><br \/>\n2 tablespoons butter<br \/>\n1 tablespoon olive oil<br \/>\n1 \u00bd cups diced onion<br \/>\n2 tablespoons minced garlic<br \/>\n8 oz mushrooms<br \/>\n1 \u00bc teaspoons salt<br \/>\n10 cups chopped fresh swiss chard<br \/>\n3 cups tomato sauce<br \/>\n1 cup vegetable stock<br \/>\n\u00bc tsp freshly ground black pepper<br \/>\n2 tablespoons each chopped fresh basil, parsley, thyme, marjoram and oregano<\/p>\n<p><strong>Cheese Filling:<\/strong><br \/>\n3 cups low fat cottage cheese<br \/>\n\u00bc tsp nutmeg<\/p>\n<p><strong>To Assemble:<\/strong><br \/>\nVegetable oil cooking spray<br \/>\n1 pound fresh or par cooked pasta sheets, cut to fit baking dish<br \/>\n3 cups (about 12 ounces) shredded mozzarella<br \/>\n2 cups freshly grated Parmesan cheese<\/p>\n<h2>Method:<\/h2>\n<p>Preheat oven to 375 degrees F.<\/p>\n<p><strong>Chard Mushroom Filling:<\/strong><br \/>\nPlace a large skillet on medium heat and add the butter and olive oil.<br \/>\nAdd the onions and saut\u00e9 until soft and translucent, 3 to 4 minutes.<br \/>\nAdd 1 the garlic, mushrooms, salt, pepper and fresh herbs.<br \/>\nContinue to cook until mushrooms are soft and wilted, 5 to 6 minutes.<br \/>\nAdd the swiss chard in batches until wilted, 3 to 4 minutes.<br \/>\nAdd the tomato sauce and vegetable stock and simmer for 3 to 4 minutes, or until the sauce reaches your desired consistency. Remove the pan from heat and set aside.<\/p>\n<p><strong>Cheese Filling:<\/strong><br \/>\nIn a bowl, combine 1\/2 tsp salt, cottage cheese, and nutmeg.<\/p>\n<p><strong>To Assemble:<\/strong><br \/>\nCoat a 9.5&#8243; x 13&#8243; baking pan with olive oil.<br \/>\nArrange lasagna noodles on the bottom of the pan until most of the surface area is covered, but the noodles are not overlapping.<br \/>\nSpread a layer of the cottage cheese mixture, then the spinach mushroom filling, then 1\/3 mozzarella and Parmesan.<br \/>\nRepeat layers, ending with mozzarella and Parmesan.<br \/>\nCover with foil and bake for 45 minutes.
